Piperine is a type of bioactive compound that can be isolated from black pepper. Currently the utilization piperine dominated by health sector. In this study, was using Soxhlet method. The purpose research to propose mathematical model determine value diffusivity (DA) piperine, extraction rate constant (k) and isolation equilibrium for commercial designs. Based on results obtained DA at 0.1878 m2/minute, k 0.0012 m/minute K 0.900. Extraction carried out 96% ethanol solvent with ratio 25:1 pepper samples soxhletation method 5 circulations. resulting extract 55.46 mol/liter
